Getting layers can help, as can getting your hair thinned out with a special razor. (most salons and hair cutting places have it) You also might want to try a flat iron. I have poofy, coarse, wavy hair, but when I use my CHI flat iron, my hair is half the size it is naturally, and it's straight, shiny, and has a flatter, smoother texture. It definitely looks and feels "thinner", but in a good way.
Is there any way you can make your hair thinner and not as thick as it is now?
Yeah just go to a hairdresser and tell them that you would like to thin your hair out a bit. They have special techniques and scissors to do that with. I would only trust a certified professional to do this, though. But that is just me.

Layer your hair - especially in back.
Using different scissor angles and fraying the edges make it more nartural and flowy.

if its just frizzy or poofy, use an anti-frizz serum.
